GARLIC MASHED CAULIFLOWER
A creamy flavorful substitute for classic mashed potatoes.

Ingredients:
- 2 heads Cauliflower
- 1/4 teaspoon Salt
- 1/4 teaspoon Black Pepper
- 4 cloves of garlic, minced (or 4 teaspoons)
- Butter, optional
Optional Ingredients:
- Chives or Parsley
- 1/4 Parmesan Cheese
- 1/4 cup plain Greek Yogurt
Tools:
- 4-6 quart pot
- Food Processor, Immersion Blender, standard blender
- Serving bowl
Instructions:
- Prep the cauliflower but removing the outer leaves, and cut into florets.
- Place cauliflower in pot, add water to cover florets and cover with lid. Boil for 20-30 minutes or until cauliflower can easily be mashed between your fingers without feeling gritty. (This will help to make it creamy).
- Drain and add cauliflower back into the pot. Sauté for 3 minutes to remove excess water.
- Add cauliflower to food processor and set aside. Add 1 teaspoon of olive oil or butter to the same pot over medium heat and sauté the garlic until golden and fragrant, approximately 1 minute.
- Add garlic to the food processor and blend until smooth.
- Transfer to a serving dish and top with parsley, chives, parmesan cheese, or yogurt if desired.
Notes:
- Cauliflower is not rich in starch the way potatoes are, removing as much water as you can is key to a smooth, creamy mixture.
- You can skip the step with the sautéed garlic and use garlic powder if desired. The sautéed garlic will add a greater depth of flavor.
- For an even creamier texture, add ¼ cup grated Parmesan Cheese and ¼ cup plain Greek yogurt.
- If you do not have a food processor you can use an immersion blender or standard blender.
