Roasted Seasoned Baby Potatoes

These roasted baby potatoes are seasoned to perfection; slightly spicy but not overwhelming.

Ingredients:
  • 1 1/2 pound bag of baby potatoes, washed (any color)
  • 1 1/2 Tablespoon Olive Oil
  • 1/2 teaspoon Paprika
  • 1/2 Tablespoon Italian seasoning
  • 1/4 teaspoon Garlic Powder
  • 1/4 teaspoon Onion Powder
  • 1/8 teaspoon Cayenne Pepper
  • Pinch of Pepper
  • Pinch of Salt
  • Optional: 1/4 teaspoon fresh dill

Tools:
  • Cutting board
  • Measuring spoons
  • Knife
  • Baking sheet/pan
  • Parchment paper or silicone liner

Instructions:
  1. Preheat oven to 400F.
  2. Wash potatoes and cut them into desired shape approximately ½ in in size and transfer to baking sheet lined with parchment paper or a silicone liner.
  3. Add spices and olive oil over top and toss to evenly distribute.
  4. Place pan in preheated oven and roast for 40 minutes. You can flip potatoes mid-way through cooking if it looks like they need it.

Notes:
  • Cooking times may vary depending on oven. Keep an eye on your potatoes
  • To check if done, a fork should easily slide in potato
